Salads: 

Just like with sandwiches, you can be creative! 

  • Pasta, rice, quinoa… 
  • Vinaigrette: olive oil, balsamic vinegar, lemon, salt, pepper, garlic…

Vegetarian chili: 

For this simple and filling dish, you will just need cans of food:

  • Canned red or black beans. 
  • Canned corn. 
  • Canned tomatoes (diced or sauce). 
  • Chopped onion. 
  • Seasonings (paprika, cumin, salt, pepper, etc.). 

 To make this dish follow these instructions: 

  • In a saucepan, sauté the chopped onion until golden brown. Add the beans, corn and canned tomatoes. Season with chili powder, cumin, paprika, salt and pepper. Let simmer for about 15-20 minutes. Serve hot. And for more consistency, you can accompany this dish with rice. 

 Grilled vegetable papillotes : 

 To make this recipe you will need: 

  • Vegetables of your choice (zucchini, peppers, mushrooms, carrots, etc.) 

  • Olive oil 

  • Aromatic herbs (thyme, rosemary, basil) 

  • Salt and pepper 

 Here are the steps to follow: 

  • Prepare a large sheet of aluminum foil. Cut the vegetables into pieces and arrange them in the center of the foil. Drizzle with olive oil, add the aromatic herbs, salt and pepper. Fold the foil to form an airtight papillote. Place the papillote on the grill or near the embers of the campfire for about 15-20 minutes, turning occasionally. The vegetables should be tender and lightly grilled . 

 Pasta with spicy tomato sauce : 

 A simple recipe that helps out when you're hungry! You will need: 
  • Pasta of your choice 
  • Canned tomato sauce 
  • Chopped onion 
  • Chopped garlic 
  • Chili flakes (to taste) 
  • Olive oil 
  • Salt and pepper 
To make the recipe, here are the steps to follow: 
  • Cook the pasta according to the packet instructions. In a saucepan, sauté the onion and garlic in olive oil until golden brown. Add the canned tomato sauce and chilli flakes. Season with salt and pepper. Let simmer for a few minutes. Serve the spicy tomato sauce over the cooked pasta. 

 Grilled bananas with chocolate: 

How can I end this article without talking about dessert! So here is a little recipe that is a change from grilled marshmallows (even if we love them). 
 You will need: 
  • Bananas 
  • Dark chocolate bar (broken into pieces) 
  • Crushed nuts (optional) 
  • Aluminum foils 
 Here's how to make the recipe: 
  • Preheat grill or build a campfire. Cut bananas in half lengthwise, leaving skin on. Place each banana half on a sheet of aluminum foil. Top with dark chocolate chunks and chopped nuts. Wrap bananas tightly in foil. Place bananas on grill or near coals and grill for about 5 minutes, until chocolate is melted. Remove bananas from heat and let cool slightly before serving.
