1. Vegetable and sausage skewers

Ingredients :

  • Sausages (chicken, beef or vegetarian)
  • Peppers (red, green, yellow)
  • Onions
  • Mushrooms
  • Olive oil
  • Salt and pepper

Instructions :

  1. Cut sausages, peppers, onions and mushrooms into similar sized pieces.
  2. Thread the pieces onto skewers.
  3. Brush with olive oil and season with salt and pepper.
  4. Grill the skewers over the fire until the vegetables are tender and the sausages are cooked through.


2. Cinnamon French Toast

Ingredients :

  • Slices of bread (ideally a little stale)
  • Eggs
  • Milk
  • Sugar
  • Cinnamon
  • Butter

Instructions :

  1. Beat the eggs with the milk, sugar and cinnamon in a bowl.
  2. Dip the bread slices in the mixture until well soaked.
  3. Heat a cast iron skillet over the campfire and add butter.
  4. Brown the bread slices on both sides until crispy and golden brown.


3. Fish papillotes with vegetables

Ingredients :

  • Fish fillets (salmon, trout or other)
  • Lemon
  • Zucchini
  • Cherry tomatoes
  • Garlic
  • Olive oil
  • Salt and pepper

Instructions :

  1. Cut the zucchini and cherry tomatoes into pieces.
  2. Prepare sheets of aluminum foil large enough to hold the fish fillets and vegetables.
  3. Place a fish fillet on each sheet, add lemon slices, zucchini, cherry tomatoes and minced garlic.
  4. Drizzle with olive oil, salt and pepper.
  5. Close the papillotes and place them on the embers of the campfire for about 15-20 minutes, until the fish is cooked through.


4. Canned chili con carne

Ingredients :

  • Cans of red beans
  • Cans of diced tomatoes
  • Ground meat (or vegetarian substitute)
  • Onion
  • Garlic
  • Chili powder
  • Cumin
  • Salt and pepper
  • Grated cheese (optional)
  • Fresh coriander (optional)

Instructions :

  1. Heat a pan over the campfire.
  2. Add the chopped onion and garlic and sauté until golden.
  3. Add the ground meat and cook until golden brown.
  4. Stir in the red beans and diced tomatoes.
  5. Season with chili powder, cumin, salt and pepper.
  6. Let simmer for about 20 minutes.
  7. Garnish with grated cheese and cilantro before serving, if desired.


5. S'mores

Ingredients :

  • Marshmallows
  • Chocolate bars
  • Graham crackers

Instructions :

  1. Toast marshmallows on sticks over fire until golden brown and melted.
  2. Place a toasted marshmallow on a graham cracker, add a piece of chocolate and top with another cracker.
  3. Press lightly to melt the chocolate with the heat of the marshmallow.
